Brian Solazzi
Humble Pie
Seattle, Wash.

Washington’s official fruit is the apple, and no wonder: The state produces 58 percent of all apples in the country. Humble Pie’s two apple-topped pizzas might break with the buttery sweet tradition of good ol’ American apple pie, but Grist’s intrepid reporters can attest: The apple, bacon, and local mozzarella option is delicious.

Owner Brian Solazzi is a LEED-certified architect, and built Humble Pie himself. The restaurant is built from two shipping containers and has a footprint of 200 square feet. Solazzi sourced most of his building supplies from the Seattle area, and designed the space to conserve energy and water. Humble Pie also produces many of its ingredients on-site, with a chicken coop and a green roof that grows the restaurant’s supply of basil and arugula, depending on the season.

Apple pizza for everyone!

Solazzi is committed to keeping his food affordable for people who live in the neighborhood. “We really, really are trying to reflect life here on Rainier Avenue,” he says. “We focus on Northwest culinary influences, but also on pricing and affordability.”
