SporkfulMy, that looks delicious yet labor-intensive.

Vegetarians are a pain. I mean, the word “vegetarian” has five whole syllables. Obviously these people are high-maintenance, even though they insist they’re not. Oh well. You just gotta know how to deal with them. Which is why when they insist you don’t need to go out of your way for them, you should still go out of your way. And what better way to go out of your way than to go way the hell out of your way with this absolutely amazing recipe for the Veggieducken.

There is no duck in this — the name is a play on the dish turducken, which is a chicken inside a duck inside a turkey. The veggie version features a pea inside some broccoli inside a squash inside a pumpkin inside a pig. No. It is squash, wrapped around yams, wrapped around leeks.

If that sounds delicious, we are sure it is. If that sounds like a time-consuming pain in the ass … well, it might be that too. Anyway, the recipe is here. Decide if you want to make it, or if you just want to say “screw it, mashed potatoes and salad and pecan pie will do.”
